Game Day Stew

Game Day Stew

The search for easy winter meals is never ending.

You know what? Not even winter meals, just MEALS. The way I strive for something new beside the rotated 5-7 meals. What I wouldn't give somedays for something new and tasty!

Coming up with this recipe was really pretty simple, I took the meat that was left over in our fridge from other meals, fried up some bacon and opened some cans! We love a favorable multi-meat meal. This stew is built on a base of tender chicken, smoky bacon, kielbasa and rich stewed tomatoes. Add in elbow macaroni, and you’ve got the kind of meal that’s filling without being fussy. The bacon adds just the right amount of savory depth, while the tomatoes balance things out with a hint of tangy sweetness. Each spoonful is layered with flavor, making it the kind of dish that keeps people coming back for seconds.

Generally speaking I always can a tomato sauce during harvest season its my number one cellar go to. I try to can as many as I can. It's so versatile and all you have to do is add a scoop of tomato paste and I swear you end up having the best pizza sauce. This is a recipe I'll be sharing in the next few weeks so keep an eye out!

I threw the ingredients in my beautiful cast-iron dutch oven, these are not only sturdy, coming in gorgeous colors but the lid is heavy and airtight which I love! This dutch oven is  great for sourdough as well.  Be sure to add this to your next Sunday night get together.

1 cooked chicken breast shredded (I usually boil my chicken)

1 kielbasa or Italian sausage cut into 1/4 inch slices (we prefer kielbasa)

3 pieces of bacon

1/2 diced onion

2 garlic cloves

1 can of diced tomatoes

1 can of tomato sauce

2 cups of chicken broth

1/2 teaspoon basil

1/2 teaspoon salt

1/4 teaspoon thyme

1/4 teaspoon onion salt

1/4 teaspoon garlic powder

1/4 teaspoon sage

1/4 teaspoon pepper

1/4 teaspoon celery salt

2 cups of cooked macaroni noodles

Directions

-it should be noted that if you doubled the broth you could make this into a one pot meal very easily. Personally, I prefer my noodles to be cooked separately.

In a dutch oven add 1 tbs butter and sliced kielbasa sauté until cooked. Add onion and garlic and sauté until fragrant. Add the remaining ingredients
