Don’t buy pancake mix ever again.
No really, I found a recipe that is delicious, healthier, and you probably have everything in your kitchen for them right now.
Every Sunday my mom and dad would make buttermilk pancakes, the family recipe that has been passed down from generation to generation, they were and are delicious. But the pancakes I’m writing about today differ because these pancakes don’t call for buttermilk. They call for milk.
In 2020 I was on the hunt for buttermilk to make pancakes, a little home delicacy while being trapped at home. The problem was, I couldn’t find buttermilk anywhere, and when I did It was in a massive amount, and buttermilk generally spoils within 3-6 days after purchasing it (at least thats how it seems)
So I started messing around trying to figure out a recipe that would be easy and with products I already have. Thats where this wonderful easy pancake recipe came about.

Ingredients
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tbsp sugar
- 1 egg
- 2 tbsp softened salted butter
- 1 ¾ cup milk
Instructions
- combine, and mix together. Flip when bubbles appear and until its golden brown.
Love this! What I’ve found to make buttermilk is you can add lemon juice to milk to make a buttermilk equivalent. Then you can make just what you need. It’s a good alternative. But this is a great option because lots of time I may not have lemon juice on hand. Thanks for sharing!
