If you watch my instagram stories you know that my husband, Jeremy threw his back out over the weekend. So I needed a quick easy meal that I could throw together as my chores list doubled while his back was out. I had a pound of ground beef thawing and knew exactly what I was going to throw together.
Taco Soup.
This easy meal is just that, EASY! What mama doesn’t love easy?? Plus its been wintry and cold out so it warmed us up in no time after spending time outside getting wood for the wood stove!

Taco Sou[

Prep Time 10 minutes
Cook Time 15 minutes

Ingredients
  

  • 1 lb ground beef
  • 1 onion
  • 1 14 oz tomato sauce
  • 2 4oz tomato paste
  • 6 cups water or 4 cups water 2 cups beef broth
  • 1 4 oz green chilli
  • 1 14 oz black beans
  • 1 14 oz corn
  • 1 14 oz dice tomatoes
  • 1 8 oz sliced black olives
  • 3 tbsp taco seasoning
  • cheese optional
  • chips optional
  • sour cream optional

Instructions
 

  • brown hamburger and onion together.
  • pour water, (and beef broth if wanting) in pan, add cooked hamburger, onion, corn, black beans, black olives, green chilis, tomato sauce, tomato paste, diced tomatoes, and taco seasoning, bring to a simmering boil for 15 minutes, serve with cheese, sour cream and chips as toppings!
  • (The best chips with this recipe, in our opinion, are the sweet chili Doritos!)
